Cannabis Lemon Loaf Cake: An Easy Weed Baking Recipe

Lemon does a great job of taming that grassy weed flavor, which makes this loaf one of the easiest edibles to love — plus bonus recipes for cannabis cream, cookies and brownies.

A cannabis lemon loaf is a classic pound-cake-style loaf made with cannabutter instead of regular butter, and the lemon juice and zest do a solid job of masking that grassy weed taste. It takes about an hour start to finish, and all you need is pantry staples plus your infused butter. This one came straight from a reader suggestion — try it and let us know how it turns out! For the loaf you'll need 200 g (about 7 oz) of our cannabutter at room temperature, 200 g (1 cup) of sugar, 250 g (about 2 cups) of fine all-purpose flour (in Argentina we use "0000" flour), 10 g (2 tsp) of baking powder, 4 eggs, the juice of 1 lemon and the zest of 2 lemons. First, preheat the oven to 170 °C (340 °F). In a bowl, beat the eggs and gradually add the sugar until everything comes together into a pale, creamy mix. Add the cannabutter, the lemon juice and the zest, and mix well. Now add the dry ingredients: the flour and the baking powder. Once everything is fully combined, pour the batter into a greased and floured loaf pan. Bake at 170 °C (340 °F) for roughly 45 minutes. Let it cool and, if you're feeling fancy, top it with a chocolate coating or a lemon glaze.

How to make weed-infused cream

Infused cream is easy to pull off. Here's how:
  1. Ingredients:
  • 1 cup heavy whipping cream
  • 1/4 cup cannabutter
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  1. Directions:
  • In a saucepan over medium heat, warm the whipping cream until it's hot but not boiling.
  • Add the cannabutter and brown sugar to the hot cream. Stir until the butter is completely melted and everything is well blended.
  • Turn the heat down to low and keep warming the mix for about 15-20 minutes, stirring now and then so it doesn't stick to the bottom of the pan. This helps the cannabinoids in the butter blend evenly into the cream.
  • Take the pan off the heat and stir in the vanilla extract.
  • Let the infused cream cool to room temperature, then move it to an airtight container.
  • Keep it in the fridge until you're ready to use it.
You can use this cream in all kinds of recipes, from desserts to sauces. Just make sure you work out and keep an eye on how much cannabis you're using, based on your own tolerance and preferences.

Here's another one: easy cannabis cookies

Ingredients:
  • 1/2 cup cannabutter
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips (optional)
Directions:
  1. Preheat the oven to 180 °C (350 °F) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the cannabutter and brown sugar until smooth.
  3. Add the egg and the vanilla and keep beating until well combined.
  4. In a separate bowl, sift the flour, baking soda and salt. Then gradually add this dry mix to the butter and sugar, mixing well.
  5. If you like, fold the chocolate chips into the dough so they're spread evenly.
  6. Using a spoon or an ice cream scoop, shape walnut-sized balls of dough and place them on the baking sheet with plenty of space between them.
  7. Bake the cookies for about 10-12 minutes, or until the edges are golden.
  8. Take them out of the oven and let them cool on the sheet for a few minutes before moving them to a wire rack to cool completely.
Keep in mind that the dose in these cookies depends on how much THC is in the cannabutter you use.

And a recipe for cannabis brownies

Ingredients:
  • 1/2 cup cannabutter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/3 cup cocoa powder
  • 1/2 cup flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup chopped walnuts (optional)
Directions:
  1. Preheat the oven to 180 °C (350 °F) and grease a square or rectangular baking pan.
  2. In a saucepan over medium-low heat, melt the cannabutter. Don't let it overheat or boil.
  3. Move the butter from the pan into a large bowl. Add the sugar and mix well.
  4. Add the eggs one at a time, beating well after each one. Then add the vanilla and mix again.
  5. In a separate bowl, sift the cocoa powder, flour, salt and baking powder. Add this dry mix to the butter and sugar and stir until you get a smooth batter.
  6. If you want, fold in the chopped walnuts so they're spread evenly.
  7. Pour the batter into the baking pan and spread it out evenly.
  8. Bake the brownies for about 25-30 minutes, or until a toothpick stuck in the center comes out slightly moist but not raw.
  9. Take the brownies out of the oven and let them cool in the pan before cutting them into squares.
Heads up: cannabis brownies can hit harder than other ways of consuming cannabis because of how your liver metabolizes THC. Start with a small piece and give it time.
