Lemon Yogurt Weed Cake: A No-Scale Cannabis Cake Recipe (Plus More Edibles)

One yogurt cup does all the measuring: an easy lemon cake with cannabutter, plus tea, ice cream, brownies, cannamilk, chocolate and pizza.

To make a lemon weed cake, you mix a classic yogurt cake batter — lemon yogurt, flour, sugar, oil, eggs, baking powder and lemon zest, all measured with the empty yogurt cup — then add softened cannabutter and bake it for about 30 minutes. No kitchen scale needed, and it's one of the easiest edibles you can bake at home. Here's the full recipe, a few safety tips, and more cannabis recipes to round out your menu.

Why a lemon weed cake?

Cannabis desserts are getting more popular everywhere, and for good reason. Pairing the flavors of a homemade cake with the effects of weed is pretty hard to beat. Whether you're into cannabis for its therapeutic side or just because you enjoy it, this recipe is cheap, easy and delivers great results.

Ingredients (serves 5):

  • 1 lemon yogurt (we'll use the empty yogurt cup to measure the other ingredients)
  • 1 yogurt cup of flour
  • 1 yogurt cup of sugar
  • 1 yogurt cup of sunflower oil
  • 3 eggs
  • 1 packet of baking powder
  • Zest of one lemon, washed first
  • About 150 g (roughly ⅔ cup) of cannabutter, softened to the texture of play dough
  • Chocolate drink mix to taste (optional, for flavor and color)

What you'll need:

  • An oven-safe dish, ideally earthenware
  • Butter (to grease the dish so the cake doesn't stick)
  • A spoon or something similar to mix with
  • Hand mixer (optional)
  • Spatula
  • Paper towels
  • A microwave-safe bowl or small saucepan to soften the cannabutter
  • Oven mitt (so you don't burn yourself)

How to make it, step by step:

  1. Soften the cannabutter until it has the texture of play dough: leave it out at room temperature or give it a few seconds in the microwave, without melting it.
  2. Grease the oven dish (earthenware if you've got it) with butter so the cake doesn't stick.
  3. Preheat the oven to 200 °C (390 °F) while you get on with the next steps.
  4. Add all the ingredients except the cannabutter to the dish.
  5. Mix well with a spoon, or use a hand mixer if you prefer, until you get a smooth batter.
  6. Add the softened cannabutter and mix again until it's evenly spread through the batter, so every slice gets the same dose.
  7. Wipe the inside and outside rim of the dish with a paper towel so the cake doesn't stick as it rises.
  8. Put the dish in the preheated oven.
  9. Bake for roughly 30 minutes.
  10. Check whether it's done by poking the tip of a spatula into the center of the cake. If it comes out clean, the cake is ready; if not, give it a few more minutes, keeping an eye on the top so it doesn't burn.

Tips for eating weed cake safely:

  • How strong the cake hits, and how it feels, depends on the strain you use. Sativas tend to bring euphoria and giggles, while indicas lean more relaxing. If you're after medicinal properties without the high, consider a CBD-dominant strain with little to no THC.
  • Remember that edibles take longer to kick in than smoked weed — usually one to two hours — and the effects can last a lot longer.
  • If you feel like the cake isn't doing anything after a while, be patient before eating more, so you don't get any nasty surprises.
  • Don't mix cannabis with alcohol. Wash your cake down with juice, milk, coffee or tea instead.
  • Never serve weed cake as a prank, especially to someone who doesn't use cannabis — that can go badly wrong.
  • Don't drive high, and maybe skip it for breakfast before work.

Now that you've got this lemon weed cake recipe in your back pocket, enjoy it responsibly and share some good moments with friends and the people you love!

Cannabutter

Super easy to make, and a kitchen essential for tons of other cannabis recipes.

Ingredients:

250 g (about 1 cup) butter (can be vegan)
500 ml (about 2 cups) water
25–45 g (roughly 1–1½ oz) of weed (flower or resin-coated sugar leaves, depending on the potency and flavor you want)
Method:

First, decarb the ground weed in the oven (115 °C / 240 °F for 30–40 minutes, same as in the cannabis milk recipe below), then simmer it in water over very low heat for 20 minutes. This pulls out the chlorophyll flavor (that grassy taste) and most of the impurities, so it's ready to mix with the butter.

Next, melt the butter in water over the lowest heat, never letting the water come to a full boil. Once the butter has completely melted, add the weed.

Keep it on the lowest heat the whole time and stir constantly — you'll see the butter slowly turn greener. Keep stirring for about 30 minutes, until the butter looks smooth and even.

Once you're sure you've got a smooth, greenish mixture, strain it through a sieve so no plant matter is left behind.

Let it cool at room temperature for a couple of hours, then put it in the fridge and let it sit for 24 hours.

You'll end up with a layer of butter floating on top of the water, with a texture a lot like store-bought butter but a much greener color.

Cannabis tea

Quick and easy.

Just make a cup of tea the way you normally would and stir in a teaspoon of cannabutter. Sweeten it with honey and enjoy — though like any edible, give it time to kick in.

Weed ice cream

Ice cream is the perfect way to wrap up a meal or a hangout with friends. It only takes four steps.

Heat 500 ml (about 2 cups) of heavy cream in a pot over medium heat until it boils.
In another pan, melt 50 g of cannabutter with 75 g of sugar.
In a bowl, mash up some fruit, like bananas or raspberries. Combine everything and mix gently.
Pour the mix into a large container and freeze it overnight.

Weed brownies

Behold the most famous weed edible of all time! They're so tasty and easy that they're hard to resist.

All you need is some weed, oil and a boxed brownie mix. First, make sure your brownie mix calls for oil — that part is essential.

To start, you need to infuse the oil with the weed.

Grind 4–12 g of flower (depending on how strong you want them) as fine as you can and decarb it in the oven first (115 °C / 240 °F for 30–40 minutes). Put the decarbed weed in a pot and pour in however much oil the brownie mix instructions call for.

Heat over medium for about 30 minutes, stirring now and then, so the oil soaks up all the cannabinoids from the flower.

Finally, let the oil cool and strain out the plant matter.

Now you've got cannabis oil ready to use with the instructions on your brownie mix!

Cannabis milk:

Cannabis milk is another way to take cannabis as an edible. Here's a basic recipe for making cannamilk at home:

Ingredients:

  • 3–4 g of cannabis buds or 10–15 g of ground cannabis leaves
  • 2 cups of milk (cow's milk, almond milk or any other plant milk)
  • 1 tablespoon of fat (butter, coconut oil or another fat)
  • Optional: sweetener to taste (sugar, honey, stevia, etc.)

Steps:

  1. Grind the cannabis buds or leaves in a grinder or break them up by hand.
  2. Preheat the oven to 115 °C (240 °F) and spread the buds or leaves on a baking sheet.
  3. Bake for about 30–40 minutes to activate the cannabinoids through decarboxylation (the heat step that turns THCA into THC). This is key to getting the most out of your weed when you eat it.
  4. In a small pot, heat the milk and fat over medium-low heat. Add sweetener now if you like.
  5. Add the activated buds or leaves to the hot milk and stir well.
  6. Let the milk and cannabis simmer gently for at least 30 minutes, stirring occasionally. Don't let it boil.
  7. After 30 minutes, take the pot off the heat and let it cool.
  8. Once it's cool, strain the cannamilk through a sieve or cheesecloth to remove the plant material.
  9. Pour the cannabis milk into a clean container and keep it in the fridge until you're ready to use it.

Cannabis chocolate:

Here's a basic recipe for making cannabis chocolate at home:

Ingredients:

  • 28 g (1 oz) of unsweetened or high-cacao chocolate
  • ¼ cup of cannabutter (made ahead by infusing butter with cannabis)
  • Optional: sweetener to taste (sugar, honey, stevia, etc.)
  • Optional: extra add-ins to customize your chocolate (nuts, dried fruit, etc.)

Steps:

  1. Break or chop the chocolate into small pieces and put them in a heat-safe bowl.
  2. In a saucepan over low heat, or in the microwave in 30-second bursts, melt the cannabutter until it's liquid.
  3. Pour the melted cannabutter over the chocolate and stir until the chocolate melts completely and you get a smooth, even mixture.
  4. If you want to sweeten the chocolate, add sweetener to taste and stir until it fully dissolves.
  5. If you're adding extras like nuts or dried fruit, fold them in gently so they're spread evenly through the chocolate.
  6. Pour the chocolate into candy molds or onto a tray lined with wax paper.
  7. Refrigerate for at least 1 hour, or until the chocolate has fully set.
  8. Once it's firm, pop it out of the molds or cut it into pieces.

Weed pizza:

Making weed pizza means working cannabis into the dough, the sauce or the toppings. Keep in mind that cannabis can be psychoactive, and you need to know the laws and rules where you live. It's also crucial to consume responsibly and keep the possible effects in mind.

Here's a basic weed pizza recipe:

Ingredients:

  • Pizza dough (homemade or store-bought)
  • Tomato sauce or pizza sauce
  • Shredded cheese (mozzarella or whatever you like)
  • Extra toppings (ham, mushrooms, olives, etc.)
  • Decarboxylated (activated) and ground cannabis (how much depends on your preference and tolerance)

Steps:

  1. Make the pizza dough following your recipe or the package directions. Make sure you've got enough dough for the size of pizza you want.
  2. Preheat the oven to the temperature recommended for your pizza.
  3. In a bowl, mix the ground cannabis into the tomato or pizza sauce. The amount can vary with your preference and tolerance, but remember to go easy.
  4. Stretch the dough onto a pizza pan or pizza stone, keeping it an even thickness.
  5. Spread the cannabis tomato sauce over the dough. Spread it evenly so the effects are consistent across the whole pizza.
  6. Add the shredded cheese and any toppings you want.
  7. Bake the pizza in the preheated oven according to your dough recipe, or until the crust is golden and the cheese is melted and bubbly.
  8. Pull the pizza out of the oven and let it cool slightly before slicing and serving.
